This post is courtesy my good friend Himani, who has been teaching us to make cakes since we were students at BITs pilani!

Here’s the trick for what is possibly the worlds most tasty and healthy cake ( right from the chef’s mouth):

Ingredients: 1 3/4 cups whole wheat flour, 1 cup dates chopped finely, 3/4 cup sugar, 3 eggs, 1/2 teaspoon baking soda, 1 teaspoon baking powder, 1 teaspoon vanilla essence, 100 gm butter, 1 cup boiling water.< optional : 1/2 cup chopped walnut>

Process: Soak the dates in hot water and keep aside. Sift the flour with baking powder and soda. Beat the sugar & butter, and add the eggs into it and mix well. Add vanilla essence into this, alternately add the flour and the dates ( with the hot water), and mix everything well. Add walnuts if you choose to.

Grease and dust the cake tin – bake at 180 deg for 30 min ( test if done, else keep until a knife comes out clean).

Eat warm, or store in a container to be served with tea, coffee or just like that!
